Main Ingredients
- 4 cups yellow squash, sliced
- 1 cup onion, chopped
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 cup crushed crackers
- 2 tablespoon butter, melted
- to taste salt and pepper
Preheat oven to 350°F (175°C).
In a large pot, boil sliced squash and chopped onion until tender, about 5 minutes. Drain well.
In a mixing bowl, combine the cooked squash and onion with the shredded cheddar cheese, sour cream, salt, and pepper.
Transfer the mixture to a baking dish. Top with crushed crackers and drizzle melted butter over the top.
Bake in the preheated oven for 25-30 minutes, until the top is golden brown and the casserole is heated through.
