  • 4 cups yellow squash, sliced
  • 1 cup onion, chopped
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup crushed crackers
  • 2 tablespoon butter, melted
  • to taste salt and pepper

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a large pot, boil sliced squash and chopped onion until tender, about 5 minutes. Drain well.
  3. In a mixing bowl, combine the cooked squash and onion with the shredded cheddar cheese, sour cream, salt, and pepper.
  4. Transfer the mixture to a baking dish. Top with crushed crackers and drizzle melted butter over the top.
  5. Bake in the preheated oven for 25-30 minutes, until the top is golden brown and the casserole is heated through.
