  • 4 ears corn, cooked and kernels removed
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ¼ cup red onion, finely chopped
  • ¼ cup fresh cilantro, chopped
  • 2 tablespoon olive oil
  • 1 tablespoon lime juice
  • to taste salt and pepper

Instructions 

  1. 1. In a large mixing bowl, combine the corn, cherry tomatoes, cucumber, red onion, and cilantro.
  2. 2. Drizzle the olive oil and lime juice over the salad. Toss to combine.
  3. 3. Season with salt and pepper to taste. Serve immediately or refrigerate until ready to serve.
