Main Ingredients
- 1 tablespoon Olive oil
- 1 cup Onion, chopped
- 2 cloves Garlic, minced
- 4 cups Spinach, fresh
- 4 cups Vegetable broth
- 1 cup Milk
- to taste Salt and pepper
1. Heat olive oil in a pot over medium heat.
2. Add chopped onion and minced garlic. Cook until softened.
3. Add fresh spinach and cook until wilted.
4. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.
5. Use a blender to puree the soup until smooth.
6. Return the soup to the pot, stir in milk, and heat through. Season with salt and pepper to taste.
