  • 1 tablespoon Olive oil
  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 4 cups Spinach, fresh
  • 4 cups Vegetable broth
  • 1 cup Milk
  • to taste Salt and pepper

Instructions 

  1. 1. Heat olive oil in a pot over medium heat.
  2. 2. Add chopped onion and minced garlic. Cook until softened.
  3. 3. Add fresh spinach and cook until wilted.
  4. 4. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  5. 5. Use a blender to puree the soup until smooth.
  6. 6. Return the soup to the pot, stir in milk, and heat through. Season with salt and pepper to taste.
