Main Ingredients
- 1 cup Rolled oats Old-fashioned or quick-cooking
- 1 cup Milk
- 1 cup All-purpose flour
- ½ cup Brown sugar Packed
- 1 teaspoon Baking powder
- ½ teaspoon Baking soda
- ½ teaspoon Salt
- 1 Egg Lightly beaten
- ¼ cup Vegetable oil
- 1 teaspoon Vanilla extract
Preheat your oven to 400°F (200°C). Grease a muffin tin or line with paper liners.
In a bowl, combine oats and milk. Let sit for 10 minutes.
In another bowl, whisk together flour, brown sugar, baking powder, baking soda, and salt.
Add egg, oil, and vanilla to the oat mixture. Mix well.
Add the wet ingredients to the dry ingredients and stir until just combined.
Divide the batter evenly among the muffin cups.
Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
