Ingredients 

Vegetables

  • 1 large zucchini sliced
  • 1 large eggplant sliced
  • 1 large red bell pepper sliced
  • 1 large yellow bell pepper sliced
  • 2 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Instructions 

  1. 1. Preheat the grill to medium-high heat.
  2. 2. In a large bowl, combine the sliced zucchini, eggplant, red bell pepper, and yellow bell pepper.
  3. 3. Drizzle the vegetables with olive oil and sprinkle with dried oregano, dried basil, salt, and black pepper. Toss to coat evenly.
  4. 4. Place the vegetables on the grill and cook for 5-7 minutes on each side, or until tender and slightly charred.
  5. 5. Remove the vegetables from the grill and serve immediately.
