Ingredients 

Main Ingredients

  • 2 lbs lamb shoulder, cut into chunks
  • 2 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 stalks celery, sliced
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup beef broth
  • 1 cup red wine
  • 2 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • ¼ cup chopped fresh parsley

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add lamb and brown on all sides. Remove lamb and set aside.
  2. In the same pot, add onion, garlic, carrots, and celery. Cook until softened.
  3. Stir in diced tomatoes, beef broth, red wine, and tomato paste. Add oregano, thyme, salt, and pepper.
  4. Return lamb to the pot. Bring to a boil, then reduce heat and simmer for 1.5 hours, or until lamb is tender.
  5. Garnish with fresh parsley before serving.
