Main Ingredients
- 2 medium eggplants
- 1 cup breadcrumbs
- ½ cup grated Parmesan cheese
- 2 eggs
- ¼ cup milk
- ½ cup marinara sauce
- 1 cup shredded mozzarella cheese
- Olive oil
- Salt and pepper to taste
Preheat oven to 375°F (190°C).
Slice eggplants into ½-inch thick rounds.
In a bowl, mix breadcrumbs and Parmesan cheese.
In another bowl, whisk eggs and milk.
Dip eggplant slices in egg mixture, then coat with breadcrumb mixture.
Heat olive oil in a pan over medium heat and fry eggplant slices until golden brown.
Place fried eggplant slices on a baking sheet.
Top each slice with marinara sauce and mozzarella cheese.
Bake in preheated oven for 10 minutes or until cheese is melted and bubbly.
Serve hot.
