Ingredients 

Main Ingredients

  • 2 medium eggplants
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 2 eggs
  • ¼ cup milk
  • ½ cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • Olive oil
  • Salt and pepper to taste

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Slice eggplants into ½-inch thick rounds.
  3. In a bowl, mix breadcrumbs and Parmesan cheese.
  4. In another bowl, whisk eggs and milk.
  5. Dip eggplant slices in egg mixture, then coat with breadcrumb mixture.
  6. Heat olive oil in a pan over medium heat and fry eggplant slices until golden brown.
  7. Place fried eggplant slices on a baking sheet.
  8. Top each slice with marinara sauce and mozzarella cheese.
  9. Bake in preheated oven for 10 minutes or until cheese is melted and bubbly.
  10. Serve hot.
