Ingredients 

Salad

  • 6 cups fresh spinach
  • ½ cup dried cranberries
  • ½ cup sliced almonds toasted
  • ¼ cup red onion thinly sliced

Dressing

  • ¼ cup olive oil
  • 2 tablespoon balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1 pinch salt to taste
  • 1 pinch black pepper to taste

Instructions 

  1. In a large mixing bowl, combine the spinach, cranberries, almonds, and red onion.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and black pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve immediately.
