  • 1 lb Chicken Thighs boneless, skinless
  • 1 lb Andouille Sausage sliced
  • ½ cup Vegetable Oil
  • ½ cup All-Purpose Flour
  • 1 cup Onion chopped
  • 1 cup Bell Pepper chopped
  • 1 cup Celery chopped
  • 4 cloves Garlic minced
  • 6 cups Chicken Broth
  • 2 teaspoon Cajun Seasoning
  • 2 pcs Bay Leaves
  • 1 cup Green Onions chopped
  • ¼ cup Fresh Parsley chopped
  • to taste Salt
  • to taste Black Pepper
  • 6 cups Cooked White Rice

Instructions 

  1. Heat oil in a large pot over medium heat. Whisk in flour to make a roux, stirring constantly until it turns a dark brown color.
  2. Add the onions, bell pepper, and celery. Cook until softened, about 5 minutes. Stir in garlic and cook for another minute.
  3. Pour in the chicken broth slowly, stirring constantly to avoid lumps. Add the chicken, sausage, Cajun seasoning, and bay leaves. Bring to a boil, then reduce heat and simmer for 45 minutes.
  4. Remove the chicken, shred it, and return it to the pot. Stir in green onions and parsley. Season with salt and pepper to taste.
  5. Serve hot over cooked white rice.
