Main Ingredients
- 1 large butternut squash peeled, seeded, and cubed
- 1 medium onion chopped
- 2 cloves garlic minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 teaspoon salt to taste
- ½ teaspoon black pepper to taste
- ½ teaspoon ground nutmeg
1. In a large pot, heat some oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
2. Add the cubed butternut squash to the pot and cook for a few minutes.
3. Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer until the squash is tender, about 20-25 minutes.
4. Use a blender to puree the soup until smooth. Return to the pot.
5. Stir in the coconut milk, salt, pepper, and nutmeg. Heat through and adjust seasoning as needed.
6. Serve hot and enjoy!
