Ingredients 

Main Ingredients

  • 2 pounds beef bones preferably with some meat on them
  • 1 large onion quartered
  • 2 large carrots cut into chunks
  • 2 stalks celery cut into chunks
  • 2 cloves garlic smashed
  • 2 tablespoons tomato paste
  • 10 cups water
  • 1 teaspoon black peppercorns

Instructions 

  1. 1. Preheat oven to 400°F (200°C). Place beef bones on a baking sheet and roast for 30 minutes.
  2. 2. Transfer roasted bones to a large pot. Add onion, carrots, celery, garlic, and tomato paste.
  3. 3. Pour in water to cover the ingredients. Add peppercorns and bay leaves.
  4. 4. Bring to a boil, then reduce heat and simmer for 4 hours. Skim off any foam that rises to the top.
  5. 5. Strain the stock through a fine-mesh strainer. Discard solids.
  6. 6. Let the stock cool, then refrigerate. Skim off any fat that solidifies on the surface before using.
