Instructions
1. In a large bowl, combine zucchini, onion, and red bell pepper.
2. Add salt and mix well. Let stand for 1 hour, then drain and rinse well.
3. In a large pot, combine sugar, vinegar, celery seed, and mustard seed. Bring to a boil.
4. Add the drained vegetables to the pot. Return to a boil, then reduce heat and simmer for 30 minutes.
5. Pack hot relish into hot, sterilized jars, leaving ½ inch headspace. Adjust lids and process in a boiling water bath for 10 minutes.
