Ingredients 

Main Ingredients

  • 200 g vermicelli noodles
  • 200 g shredded chicken
  • 1 cup julienned carrots
  • 1 cup cucumber slices
  • 1 cup bean sprouts
  • ¼ cup chopped peanuts
  • ¼ cup fresh mint leaves
  • ¼ cup fresh cilantro

Dressing

  • ¼ cup fish sauce
  • 2 tablespoon lime juice
  • 2 tablespoon sugar
  • 1 clove garlic, minced
  • 1 tablespoon water

Instructions 

  1. 1. Cook vermicelli noodles according to package instructions. Drain and set aside.
  2. 2. In a mixing bowl, combine fish sauce, lime juice, sugar, minced garlic, and water to make the dressing.
  3. 3. In a large bowl, combine cooked noodles, shredded chicken, carrots, cucumber, bean sprouts, and herbs.
  4. 4. Pour the dressing over the noodle mixture and toss well to combine.
  5. 5. Garnish with chopped peanuts and serve immediately.
