Main Ingredients
- 1 tablespoon Olive Oil
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 Bell Pepper, chopped
- 1 can Diced Tomatoes
- 1 can Kidney Beans, drained and rinsed
- 1 can Black Beans, drained and rinsed
- 1 cup Vegetable Broth
- 2 tablespoon Chili Powder
- 1 teaspoon Ground Cumin
- 1 teaspoon Paprika
- 1 teaspoon Salt
- 0.5 teaspoon Black Pepper
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until translucent, about 5 minutes.
Add the minced garlic and chopped bell pepper, cook for another 5 minutes.
Stir in the diced tomatoes, kidney beans, black beans, and vegetable broth.
Add the chili powder, ground cumin, paprika, salt, and black pepper. Stir well.
Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.
Serve hot, garnished with your favorite toppings.
