Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 cup Chopped Onions
  • 2 cloves Garlic, minced
  • 2 cups Chopped Carrots
  • 2 cups Chopped Celery
  • 4 cups Vegetable Broth
  • 1 can Diced Tomatoes
  • 1 teaspoon Dried Basil
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 2 cups Chopped Spinach

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the onions and garlic, and sauté until softened.
  3. 3. Add the carrots and celery, and cook for another 5 minutes.
  4. 4. Pour in the vegetable broth and diced tomatoes.
  5. 5. Stir in the basil, oregano, salt, and pepper.
  6. 6. Bring to a boil, then reduce heat and simmer for 20 minutes.
  7. 7. Add the spinach and cook for another 5 minutes.
  8. 8. Serve hot.
