Ingredients

  • 1 lb Beef stew meat cut into bite-sized pieces
  • 2 cups Carrots sliced
  • 2 cups Potatoes diced
  • 1 cup Celery sliced
  • 1 cup Onion chopped
  • 4 cups Beef broth
  • 1 can Diced tomatoes
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black pepper to taste
  • 2 teaspoon Dried thyme
  • 2 teaspoon Dried parsley

Instructions 

  1. 1. In a large pot, brown the beef stew meat over medium heat.
  2. 2. Add the chopped onion and cook until translucent.
  3. 3. Pour in the beef broth and bring to a boil.
  4. 4. Add the carrots, potatoes, celery, and diced tomatoes.
  5. 5. Season with salt, pepper, thyme, and parsley.
  6. 6. Reduce heat and let simmer for about 45 minutes, or until vegetables are tender.
