Ukrainian Red Borscht Soup Recipe
A hearty and traditional Ukrainian beet soup, perfect for cold days.

Main Ingredients
- 1 medium beet peeled and grated
- 2 medium potatoes peeled and cubed
- 1 medium carrot peeled and grated
- 1 medium onion chopped
- 2 cloves garlic minced
- 4 cups beef broth
- 2 tablespoon tomato paste
- 1 tablespoon vinegar
- to taste salt
- to taste pepper
- 1 tablespoon sugar
- ½ cup sour cream for serving
- 2 tablespoon fresh dill chopped, for garnish
1. In a large pot, heat some oil over medium heat. Add the onion and garlic, and cook until softened.
2. Add the grated beet and carrot, and cook for another 5 minutes.
3. Stir in the tomato paste and cook for 2 more minutes.
4. Pour in the beef broth, add the potatoes, and bring to a boil. Reduce heat and simmer for 45 minutes.
5. Add the vinegar, sugar, salt, and pepper. Simmer for another 15 minutes.
6. Serve hot, garnished with a dollop of sour cream and a sprinkle of fresh dill.
