  • 1 cup Greek yogurt
  • 1 clove garlic, minced
  • 2 tablespoon butter
  • 1 teaspoon paprika
  • 1 teaspoon red pepper flakes

Instructions 

  1. 1. In a mixing bowl, combine the Greek yogurt and minced garlic. Season with salt and pepper to taste. Set aside.
  2. 2. Fill a saucepan with water and bring to a gentle simmer. Add a splash of vinegar (optional) to help the eggs hold their shape.
  3. 3. Crack the eggs into separate small bowls. Create a gentle whirlpool in the simmering water and gently slide the eggs into the water. Poach for about 3-4 minutes, until the whites are set but the yolks are still runny.
  4. 4. In a small skillet, melt the butter over medium heat. Add the paprika and red pepper flakes, stirring until fragrant, about 1 minute. Remove from heat.
  5. 5. To serve, spread the garlic yogurt on a plate. Place the poached eggs on top. Drizzle with the spiced butter. Serve immediately.
