tomatoes, chopped (or 2 cans of diced tomatoes)

vegetable broth

fresh basil leaves, chopped

heavy cream (optional)
Instructions
Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until softened.
Add tomatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
Stir in sugar, salt, and pepper. Use an immersion blender to puree the soup until smooth.
Add basil and simmer for another 5 minutes. Stir in heavy cream if using.
Serve hot, garnished with extra basil if desired.
