Ingredients 

Main Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups tomatoes, chopped (or 2 cans of diced tomatoes)
  • 2 cups vegetable broth
  • 1 teaspoon sugar
  • to taste Salt and pepper
  • ½ cup fresh basil leaves, chopped
  • ½ cup heavy cream (optional)

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until softened.
  2. Add tomatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. Stir in sugar, salt, and pepper. Use an immersion blender to puree the soup until smooth.
  4. Add basil and simmer for another 5 minutes. Stir in heavy cream if using.
  5. Serve hot, garnished with extra basil if desired.
