Ingredients

  • 2 cucumbers sliced thin
  • ¼ cup red onion sliced thin
  • ¼ cup rice vinegar
  • 2 tablespoon sugar
  • 1 teaspoon salt
  • 1 tablespoon chopped fresh cilantro
  • 1 tablespoon chopped peanuts optional

Instructions 

  1. In a mixing bowl, combine the rice vinegar, sugar, and salt. Stir until the sugar and salt are dissolved.
  2. Add the sliced cucumbers and red onion to the bowl. Toss to coat with the vinegar mixture.
  3. Let the salad sit for at least 10 minutes to allow the flavors to meld.
  4. Before serving, sprinkle with chopped cilantro and peanuts if using.
