Ingredients

  • 1 tablespoon Vegetable Oil
  • 1 cup Chicken Breast, thinly sliced
  • 2 cups Chicken Broth
  • 1 can Coconut Milk
  • 1 tablespoon Fish Sauce
  • 1 tablespoon Lime Juice
  • 1 tablespoon Red Curry Paste
  • 1 cup Mushrooms, sliced
  • 1 cup Red Bell Pepper, thinly sliced
  • 1 tablespoon Fresh Ginger, grated
  • 1 clove Garlic, minced
  • 1 tablespoon Brown Sugar
  • 1 handful Fresh Cilantro, chopped

Instructions 

  1. Heat the oil in a large saucepan over medium heat. Add the ginger, garlic, and red curry paste, and cook for 1 minute.
  2. Add the chicken broth and bring to a boil. Reduce heat and simmer for 5 minutes.
  3. Add the coconut milk, chicken, mushrooms, and bell pepper. Simmer for another 10 minutes, until the chicken is cooked through.
  4. Stir in the fish sauce, lime juice, and brown sugar. Cook for another 2 minutes.
  5. Serve hot, garnished with fresh cilantro.
