Ingredients 

Main Ingredients

  • 1 can Black-eyed peas drained and rinsed
  • 1 can Black beans drained and rinsed
  • 1 can Corn drained
  • 1 cup Tomatoes diced
  • ½ cup Red onion finely chopped
  • ½ cup Green bell pepper diced
  • ½ cup Red bell pepper diced
  • ¼ cup Cilantro chopped
  • ¼ cup Olive oil
  • ¼ cup Red wine vinegar
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. In a large mixing bowl, combine black-eyed peas, black beans, corn, tomatoes, red onion, green bell pepper, red bell pepper, and cilantro.
  2. In a separate bowl, whisk together olive oil, red wine vinegar, garlic powder, salt, and black pepper.
  3. Pour the dressing over the bean mixture and toss to coat evenly.
  4. Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.
