Ingredients 

Main Ingredients

  • 2 large sweet potatoes peeled and cubed
  • 2 large russet potatoes peeled and cubed
  • ½ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste
  • 2 stalks celery diced
  • ¼ cup red onion finely chopped
  • 2 tablespoons fresh parsley chopped

Instructions 

  1. 1. Boil sweet potatoes and russet potatoes in a large pot until tender, about 15-20 minutes. Drain and let cool.
  2. 2. In a mixing bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper.
  3. 3. Add the cooled potatoes, celery, red onion, and parsley to the bowl. Mix well to combine.
  4. 4. Chill in the refrigerator for at least 1 hour before serving.
