Ingredients 

Main Ingredients

  • 1 lb dried split peas
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
  • 1 cup diced ham or 1 ham hock
  • 8 cups chicken broth
  • 1 bay leaf
  • Salt and pepper to taste

Instructions 

  1. Rinse and sort the split peas.
  2. In a large pot, sauté the onion, carrots, celery, and garlic until softened.
  3. Add the split peas, ham hock or diced ham, chicken broth, and bay leaf.
  4. Bring to a boil, then reduce heat and simmer for about 1 hour, stirring occasionally.
  5. Remove the bay leaf and ham hock (if used). If using a ham hock, remove the meat, chop it, and return it to the soup.
  6. Season with salt and pepper to taste.
