Ingredients

  • 1 cup long-grain white rice
  • 2 tablespoons olive oil
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 2 cups chicken broth
  • 1 teaspoon salt
  • ½ teaspoon ground cumin
  • ¼ teaspoon black pepper
  • ¼ cup chopped fresh cilantro optional

Instructions 

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the rice and cook, stirring constantly, until the rice is golden brown.
  3. Add the onion and garlic, and cook until the onion is soft.
  4. Stir in the tomato sauce, chicken broth, salt, cumin, and black pepper. Bring to a boil.
  5. Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
  6. Fluff the rice with a fork and stir in the cilantro, if using. Serve warm.
