Spanish Potato Omelet Recipe

- 4 medium Potatoes peeled and thinly sliced
- 1 medium Onion thinly sliced
- 5 Eggs beaten
- ½ cup Olive Oil
- to taste Salt
- to taste Black Pepper
Heat olive oil in a frying pan over medium heat.
Add the sliced potatoes and onions. Cook until tender, about 10 minutes.
In a bowl, beat the eggs and season with salt and pepper.
Drain the potatoes and onions from the oil and add them to the beaten eggs. Mix well.
Pour the mixture back into the frying pan. Cook on low heat until the eggs are set, about 10 minutes.
Flip the omelet onto a plate and slide it back into the pan to cook the other side for 2-3 minutes.
Serve warm or at room temperature.
