  • 400 g spaghetti
  • 200 g Pecorino Romano cheese, grated
  • 2 teaspoon black pepper, freshly ground
  • to taste salt

Instructions 

  1. 1. Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente.
  2. 2. While the pasta is cooking, heat a large skillet over medium heat. Add the black pepper and toast for about 1 minute.
  3. 3. Reserve 1 cup of pasta water, then drain the spaghetti.
  4. 4. Add the spaghetti to the skillet with the black pepper. Gradually add the grated Pecorino Romano cheese, tossing constantly to combine. Add reserved pasta water as needed to create a creamy sauce.
  5. 5. Serve immediately, garnished with additional Pecorino Romano cheese and black pepper if desired.
