Ingredients 

Main Ingredients

  • 6 large eggs hard-boiled and chopped
  • ¼ cup mayonnaise
  • 1 tablespoon yellow mustard
  • 1 tablespoon sweet pickle relish
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper freshly ground
  • 1 tablespoon chopped fresh chives optional

Instructions 

  1. 1. Place eggs in a pot and cover with water. Bring to a boil, then remove from heat and let sit for 10 minutes. Drain and cool in ice water.
  2. 2. Peel and chop the eggs. Place in a mixing bowl.
  3. 3. Add mayonnaise, mustard, pickle relish, salt, and pepper to the bowl. Mix well.
  4. 4. Stir in chopped chives if using. Adjust seasoning to taste.
  5. 5. Serve chilled, either as a sandwich filling or a side dish.
