- 2 pounds red potatoes peeled and cubed
- 1 cup mayonnaise
- ¼ cup dill pickle relish
- 2 tablespoons fresh dill chopped
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ cup celery chopped
- ¼ cup red onion finely chopped
1. Boil the potatoes in a large pot until tender, about 15 minutes. Drain and let cool.
2. In a mixing bowl, combine mayonnaise, dill pickle relish, fresh dill, salt, and black pepper.
3. Add the cooled potatoes, celery, and red onion to the bowl. Mix gently until well combined.
4. Chill in the refrigerator for at least 1 hour before serving.
