Ingredients

Main Ingredients

  • 6 large onions thinly sliced
  • 4 tablespoons butter
  • 2 cloves garlic minced
  • 1 tablespoon sugar
  • ¼ cup all-purpose flour
  • 8 cups beef broth
  • ½ cup dry white wine optional
  • 1 teaspoon dried thyme
  • 1 loaf French bread sliced and toasted
  • 2 cups grated Gruyere cheese

Instructions

  1. In a large skillet, melt the butter over medium heat. Add the onions and cook until they are caramelized, about 15-20 minutes.
  2. Add the garlic and sugar, and cook for another minute.
  3. Sprinkle the flour over the onions and stir well to combine. Cook for another 2-3 minutes.
  4. Transfer the onion mixture to the slow cooker. Add the beef broth, white wine (if using), thyme, and bay leaf. Stir to combine.
  5. Cover and cook on low for 8 hours.
  6. Before serving, remove the bay leaf. Ladle the soup into bowls, top with a slice of toasted French bread, and sprinkle with grated Gruyere cheese.
  7. Place the bowls under the broiler for a few minutes until the cheese is melted and bubbly. Serve hot.
