  • 3 pounds corned beef brisket
  • 1 large head cabbage cut into wedges
  • 6 large carrots peeled and cut into chunks
  • 10 small red potatoes halved
  • 1 large onion quartered
  • 4 cups water

Instructions 

  1. Place corned beef brisket into a slow cooker.
  2. Add water, cover, and cook on low for 8 hours.
  3. Add cabbage, carrots, potatoes, and onion to the slow cooker.
  4. Cook for an additional 2 hours on low.
  5. Remove meat and vegetables from the slow cooker. Slice meat across the grain and serve with vegetables.
