Ingredients 

Main Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1 cup red wine
  • 2 cups beef broth
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 carrots, sliced
  • 1 lb baby potatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 8 oz mushrooms, sliced
  • 2 tablespoon olive oil

Instructions 

  1. 1. Heat olive oil in a skillet over medium-high heat. Brown the beef in batches, then transfer to the slow cooker.
  2. 2. In the same skillet, add onions and garlic, cooking until softened. Add to the slow cooker.
  3. 3. Add carrots, potatoes, mushrooms, red wine, beef broth, tomato paste, thyme, salt, and pepper to the slow cooker. Stir to combine.
  4. 4. Cover and cook on low for 8 hours or until the beef is tender.
  5. 5. Serve hot, garnished with fresh parsley if desired.
