Ingredients 

Main Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 1 cup Cooked rice
  • 1 cup Black beans, drained and rinsed
  • 1 cup Corn kernels
  • 1 cup Salsa
  • 4 large Flour tortillas
  • 1 cup Shredded lettuce
  • 1 cup Shredded cheese
  • 1 tablespoon Olive oil
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

Instructions 

  1. 1. Heat olive oil in a skillet over medium heat. Add shrimp, chili powder, cumin, garlic powder, salt, and pepper. Cook until shrimp is pink and cooked through, about 5 minutes.
  2. 2. In a mixing bowl, combine cooked rice, black beans, corn, and salsa.
  3. 3. Warm tortillas in a dry skillet or microwave.
  4. 4. Assemble burritos by placing a portion of the shrimp mixture, rice mixture, shredded lettuce, and cheese onto each tortilla. Roll up and serve.
