Ingredients

  • 1 lb ground beef
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 cup corn
  • 1 cup beef broth
  • 2 tablespoon tomato paste
  • 4 cups mashed potatoes

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. In a skillet, cook ground beef until browned. Drain excess fat.
  3. Add carrots, peas, and corn to the skillet. Cook for 5 minutes.
  4. Stir in beef broth and tomato paste. Simmer for 10 minutes.
  5. Transfer mixture to a baking dish. Spread mashed potatoes on top.
  6. Bake for 20 minutes or until the top is golden brown.
