Sheet Pan Roasted Mediterranean Vegetables

Main Ingredients
- 1 large Zucchini sliced
- 1 large Red Bell Pepper sliced
- 1 large Yellow Bell Pepper sliced
- 1 cup Cherry Tomatoes halved
- 1 large Red Onion sliced
- 3 tablespoon Olive Oil
- 1 teaspoon Dried Oregano
- 1 teaspoon Dried Basil
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
Preheat your oven to 425°F (220°C).
In a large mixing bowl, combine all the vegetables.
Drizzle with olive oil and sprinkle with oregano, basil, salt, and pepper. Toss to coat.
Spread the vegetables evenly on a sheet pan.
Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly charred.
Serve warm.
