Ingredients

  • 1 large Zucchini sliced
  • 1 large Red Bell Pepper sliced
  • 1 large Yellow Bell Pepper sliced
  • 1 cup Cherry Tomatoes halved
  • 1 large Red Onion sliced
  • 3 tablespoon Olive Oil
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine all the vegetables.
  3. Drizzle with olive oil and sprinkle with oregano, basil, salt, and pepper. Toss to coat.
  4. Spread the vegetables evenly on a sheet pan.
  5. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly charred.
  6. Serve warm.
