Salmon Burgers with Lemon Basil Mayo

Salmon Burgers
- 1 lb salmon fillet, skin removed finely chopped
- ¼ cup breadcrumbs
- 1 egg beaten
- 2 tablespoon mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice freshly squeezed
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoon olive oil for grilling
Lemon Basil Mayo
- ½ cup mayonnaise
- 1 tablespoon lemon juice freshly squeezed
- 1 tablespoon basil finely chopped
- 1 teaspoon lemon zest grated
In a mixing bowl, combine the chopped salmon, breadcrumbs, beaten egg, mayonnaise, Dijon mustard, lemon juice, salt, and black pepper. Mix well.
Form the mixture into 4 patties.
Heat the olive oil in a grill pan over medium-high heat. Grill the patties for about 4-5 minutes on each side, or until cooked through.
In a small bowl, mix together the mayonnaise, lemon juice, chopped basil, and lemon zest to make the lemon basil mayo.
Serve the salmon burgers on buns with a dollop of lemon basil mayo.
