  • 2 pounds red potatoes cut into chunks
  • ½ cup mayonnaise
  • ¼ cup dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup chopped green onions
  • ¼ cup chopped celery

Instructions 

  1. Boil the red potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and let cool.
  2. In a mixing bowl, combine mayonnaise, dijon mustard, apple cider vinegar, salt, and black pepper.
  3. Add the cooled potatoes, green onions, and celery to the bowl. Mix well to coat.
  4. Chill in the refrigerator for at least 1 hour before serving.
