Main Ingredients
- 1 cup dried red beans soaked overnight
- 1 cup rice
- 1 medium onion chopped
- 1 medium bell pepper chopped
- 2 cloves garlic minced
- 1 teaspoon thyme dried
- 1 teaspoon paprika
- 1 teaspoon salt
- 1 teaspoon black pepper
- 4 cups water
1. In a large pot, sauté the chopped onion and bell pepper until soft.
2. Add the minced garlic and cook for another minute.
3. Add the soaked red beans, water, thyme, paprika, salt, and black pepper. Bring to a boil.
4. Reduce heat and simmer for 45 minutes, or until beans are tender.
5. Cook the rice according to package instructions.
6. Serve the beans over the cooked rice.
