- 1 medium eggplant diced
- 1 medium zucchini diced
- 1 medium yellow squash diced
- 1 medium red bell pepper diced
- 1 medium yellow bell pepper diced
- 1 medium onion diced
- 4 cloves garlic minced
- 2 cups tomatoes diced
- 2 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1 teaspoon salt to taste
- 0.5 teaspoon black pepper to taste
Heat olive oil in a large skillet over medium heat.
Add the garlic and onion, and sauté until softened.
Add the eggplant, zucchini, yellow squash, bell peppers, and tomatoes. Stir well.
Season with thyme, basil, salt, and pepper. Stir to combine.
Reduce heat to low, cover, and let simmer for about 30 minutes, stirring occasionally.
Serve hot as a main dish or a side.
