Puerto Rican Sancocho Recipe
A hearty and traditional Puerto Rican stew made with a variety of meats and root vegetables.

Main Ingredients
- 2 lb Beef stew meat
- 1 lb Pork ribs
- 1 lb Chicken thighs
- 2 cups Yuca, peeled and chopped
- 2 cups Yautía, peeled and chopped
- 2 cups Potatoes, peeled and chopped
- 2 ears Corn, cut into pieces
- 1 cup Pumpkin, peeled and chopped
- 1 cup Green plantain, peeled and chopped
- 1 cup Carrots, peeled and chopped
- 1 large Onion, chopped
- 4 cloves Garlic, minced
- 1 bunch Cilantro, chopped
- 1 tablespoon Olive oil
- 1 teaspoon Salt
- 1 teaspoon Black pepper
- 8 cups Water
1. Heat olive oil in a large pot over medium heat. Add the beef, pork, and chicken. Cook until browned.
2. Add the onion and garlic. Cook until the onion is translucent.
3. Add the water, yuca, yautía, potatoes, corn, pumpkin, plantain, and carrots. Bring to a boil.
4. Reduce heat to low and simmer for about 1.5 hours, or until the meats and vegetables are tender.
5. Season with salt and pepper. Stir in the chopped cilantro before serving.
