Main Ingredients
- 4 cups Potatoes, peeled and diced
- 2 cups Leeks, cleaned and sliced
- 4 cups Chicken broth
- 1 cup Heavy cream
- to taste Salt and pepper
1. In a large pot, combine potatoes, leeks, and chicken broth. Bring to a boil.
2. Reduce heat and simmer until potatoes are tender, about 20 minutes.
3. Blend the soup until smooth using a blender.
4. Stir in heavy cream and season with salt and pepper to taste.
