- 4 large potatoes peeled and grated
- 1 medium onion grated
- 2 large eggs beaten
- ¼ cup flour
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ cup vegetable oil for frying
1. Grate the potatoes and onion. Place them in a clean kitchen towel and squeeze out as much liquid as possible.
2. In a mixing bowl, combine the grated potatoes and onion with the beaten eggs, flour, salt, and pepper.
3. Heat the vegetable oil in a frying pan over medium-high heat.
4. Drop spoonfuls of the potato mixture into the hot oil, flattening them slightly with a spatula. Fry until golden brown on both sides, about 3-4 minutes per side.
5. Remove the latkes from the pan and drain on paper towels. Serve hot.
