Ingredients 

Main Ingredients

  • 8 oz Noodles any type
  • ½ cup Peanut Butter
  • ¼ cup Soy Sauce
  • 2 tablespoon Honey
  • 1 tablespoon Sesame Oil
  • 2 cloves Garlic minced
  • 1 tablespoon Ginger minced
  • 1 cup Vegetable Broth
  • 2 tablespoon Lime Juice
  • 1 cup Carrots shredded
  • 1 cup Bell Pepper sliced
  • ¼ cup Green Onions chopped
  • ¼ cup Cilantro chopped
  • ¼ cup Peanuts chopped

Instructions 

  1. 1. Cook noodles according to package instructions. Drain and set aside.
  2. 2. In a mixing bowl, whisk together peanut butter, soy sauce, honey, sesame oil, garlic, ginger, vegetable broth, and lime juice until smooth.
  3. 3. In a pan, heat a bit of oil and sauté carrots and bell pepper until tender.
  4. 4. Add cooked noodles and peanut sauce to the pan. Toss to coat evenly.
  5. 5. Serve topped with green onions, cilantro, and chopped peanuts.
