Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 cup Chopped Onion
  • 2 cloves Garlic, minced
  • 1 cup Diced Carrots
  • 1 cup Diced Celery
  • 1 can Diced Tomatoes 14.5 oz can
  • 4 cups Chicken Broth
  • 1 can Cannellini Beans 15 oz can, drained and rinsed
  • 1 cup Ditalini Pasta
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • to taste Salt and Pepper
  • ¼ cup Grated Parmesan Cheese for serving

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, cook until softened.
  2. Add carrots and celery, cook for another 5 minutes.
  3. Stir in diced tomatoes, chicken broth, and beans. Bring to a boil.
  4. Add pasta, oregano, and basil. Reduce heat and simmer until pasta is tender.
  5. Season with salt and pepper to taste. Serve with grated Parmesan cheese.
