Paleo Baked Eggs in Avocado Recipe
This is a simple and delicious paleo recipe that combines baked eggs with creamy avocado.

- 2 avocados halved and pitted
- 4 eggs
- to taste salt
- to taste black pepper
- to taste chopped chives optional, for garnish
Preheat your oven to 425°F (220°C).
Scoop out some of the avocado flesh to make room for the eggs.
Place the avocado halves on a baking sheet.
Crack an egg into each avocado half.
Season with salt and black pepper.
Bake for 15 minutes, or until the eggs are cooked to your liking.
Garnish with chopped chives if desired. Serve immediately.
