Ingredients

  • 2 cups all-purpose flour
  • 1 ¼ cups sugar
  • 2 teaspoons ground cinnamon
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 cups grated carrots
  • 1 apple, peeled, cored, and grated apple
  • ½ cup shredded coconut
  • ½ cup raisins
  • ½ cup chopped walnuts
  • 3 large eggs
  • 1 cup vegetable oil
  • 2 teaspoons vanilla extract

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin or line with paper liners.
  2. In a large bowl, whisk together the flour, sugar, cinnamon, baking soda, baking powder, and salt.
  3. Stir in the carrots, apple, coconut, raisins, and walnuts.
  4. In a separate bowl, whisk together the eggs, oil, and vanilla. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
