Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 2 medium Carrots, diced
  • 2 stalks Celery, diced
  • 1 medium Zucchini, diced
  • 1 can Diced Tomatoes 400g can
  • 4 cups Vegetable Broth
  • 1 can Cannellini Beans drained and rinsed
  • 1 cup Pasta small shapes like ditalini
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • to taste Salt and Pepper
  • 2 cups Spinach fresh, roughly chopped
  • ¼ cup Parmesan Cheese grated, for serving

Instructions 

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until softened.
  2. Add the carrots and celery, and cook for about 5 minutes until they begin to soften.
  3. Stir in the zucchini, diced tomatoes, vegetable broth, and beans. Bring to a boil.
  4. Add the pasta, oregano, and basil. Reduce heat and simmer for about 15 minutes, or until the pasta is tender.
  5. Season with salt and pepper to taste. Stir in the spinach and cook until wilted.
  6. Serve hot, topped with grated Parmesan cheese.
