Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Eggplant, diced
  • 2 Zucchini, sliced
  • 1 Red Bell Pepper, chopped
  • 400 g Canned Tomatoes
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • 1 cup Vegetable Broth
  • to taste Salt and Pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent.
  3. Add minced garlic and cook for another minute.
  4. Add diced eggplant, sliced zucchini, and chopped red bell pepper. Cook for about 5-7 minutes.
  5. Add canned tomatoes, dried oregano, dried basil, and vegetable broth. Stir well.
  6. Bring to a boil, then reduce heat and let it simmer for 30 minutes.
  7. Season with salt and pepper to taste. Serve hot.
