Ingredients 

Vegetables

  • 2 cups Bell Peppers, chopped
  • 1 cup Zucchini, sliced
  • 1 cup Cherry Tomatoes
  • 1 cup Red Onion, sliced
  • 2 tablespoon Olive Oil
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper

Instructions 

  1. Preheat your oven to 200°C (400°F).
  2. Chop all the vegetables and place them on a baking tray.
  3. Drizzle olive oil over the vegetables and sprinkle with oregano, salt, and pepper.
  4. Toss the vegetables to coat them evenly.
  5. Roast in the preheated oven for 40 minutes, stirring halfway through.
  6. Serve hot.
