Mediterranean Rice Salad

Main Ingredients
- 1 cup cooked rice
- ½ cup diced cucumber
- ½ cup cherry tomatoes, halved
- ¼ cup sliced olives
- ¼ cup crumbled feta cheese
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- to taste Salt
- to taste Pepper
Cook rice according to package instructions and let it cool.
In a large bowl, combine rice, cucumber, tomatoes, olives, and feta cheese.
Drizzle with olive oil and lemon juice.
Season with salt and pepper.
Toss everything together until well mixed.
Serve chilled or at room temperature.
